Remember I made Vietnamese Beef Stew in one of my previous posts? Well here's another perennial favourite of mine and IMHO, it's best served with mashed potatoes and mixed peas like how they do at the Hainanese joints here!
So here's my 2nd attempt at making Oxtail Stew (the first one was a bit of a bomb-out as I roasted in the oven for a bit too long). This is probably one of the few dishes my Hainanese kinsfolk seem to be really good at (in case you're wondering where to get decent Oxtail Stew in Singapore, there's Shashlik, Prince Coffee House and Jack's Place too apparently) and is one of the great British dishes that they learnt from their colonial masters before they left in the 60s.
After researching on a few online recipes, here's one I came up with.
