You can take Chinese food away from the Asian but you can never stop the Asian from cooking Chinese food, especially when faced with a severe crisis of homesickness!
This is one of the first few dishes I learnt to cook on my own whilst studying abroad. After the initial weeks of away-from-home euphoria finally settling down, I was frankly getting quite sick of the fish and chips, Thai student set lunches and fake laksa I was having every other day with the new classmates.
Back then, I was staying in a 3m X 3m hostel room which included a washing sink and a toilet and that meant I was pretty much stuck when it came to cooking. The shared kitchen was quite a distance away at the other end of the floor and honestly, I felt pretty silly every time I had to cart my basket of cooking utensils and sauces back and forth! This is when you truly thank the genius who created the rice cooker, because it's one of the most versatile items you can have in your room when you don't have a cooking stove!
